How to make cappuccino cake? Simple! Cappuccino CakePosted by Marla at recipegoldmine.com 12/27/2001 5:07 pm1/3 cup semisweet or milk chocolate chips 1/3 cup chopped hazelnuts, pecans or walnuts 1 (18.25 ounce) box yellow cake mix 2 teaspoons cinnamon 1 1/4 cups water 1 large egg 1/2 cup egg substitute 1/3 cup double-strength coffee or espresso, cooled (can use decaf)2 tablespoons instant coffee powder, espresso roast (can use decaf) Garnish: powdered sugar and ground cinnamon (optional) Preheat oven to 325 degrees F. Coat 10-inch (12-cup) Bundt or tube pan with canola cooking spray or canola oil and sprinkle lightly with flour. Sprinkle chocolate chips and nuts evenly into bottom of prepared pan. In large mixing bowl, combine cake mix and cinnamon. Add water, egg, egg substitute, and cooled coffee. Beat with electric mixer at low speed until dry ingredients are moistened. Beat at medium speed 2 minutes. Stir in instant coffee powder gently to make a swirl effect. Pour batter over topping in pan.Bake 35 to 45 minutes or until a wooden pick inserted in center comes out clean. Cool on wire rack 15 minutes. Remove from pan. Place cake, fluted side up, on serving plate. Cool completely. Dust with powdered sugar and additional ground cinnamon if desired. NOTE: You can make 24 cappuccino cupcakes instead; just use 2 muffins pans in place of the Bundt pan and bake about 15 to 20 minutes instead of 35 to 45 minutes.I like this made with semisweet chips and hazelnuts best. Sautauthig (Cornmeal Blueberry Mush)Source: Plimoth Plantation web site A favorite dish of the Native Americans during colonial times was Sautauthig (pronounced sawÃ-taw-teeg), a simple pudding made with dried, crushed blueberries, dried, cracked corn (or samp), and water. Later, the settlers added milk, butter and sugar when they were available. The Pilgrims loved Sautauthig and many historians believe that it was part of the first Thanksgiving feast. In a letter to friends back in England, one colonist describes how Sauthauthig was prepared:”…this is to be boyled or stued with a gentle fire, till it be tender, of a fitt consistence, as of Rice so boyled, into which Milke, or butter be put either with sugar or without it, it is a food very pleasant…but it must be observed that it be very well boyled, the longer the better, some will let it be stuing the whole day: after it is Cold it groweth thicker, and is commonly Eaten by mixing a good Quantity of Milke amongst it.”Here’s a recipe that gives us an idea of what Sautauthig tasted like. We call it Cornmeal Blueberry Mush but you can give it any name you want.Cornmeal Blueberry Mush1 1/2 cups water 1 1/2 cups milk 3/4 cup cornmeal or quick cooking grits 1/2 teaspoon salt 3 tablespoons maple syrup or honey 2 cups fresh, frozen or canned blueberries or 1/2 cup dried blueberries (see note)In a 2-quart saucepan heat water and milk until bubbles form around edge of pan. Stirring constantly, slowly add cornmeal or grits and salt until well combined. Reduce heat to low. Cover and simmer, until thickened, about 10 minutes, stirring occasionally.Stir in maple syrup or honey until well combined. Gently stir in blueberries.Yield: about 6 regular servings or 12 tasting-size servings (about 4 3/4 cups)NOTE: Today, we don’t have to pick and dry blueberries in the summer to enjoy them year round. We can always find them in our local supermarket - either fresh, frozen or canned, sometimes even dried. If you are using frozen blueberries in this recipe, defrost them between 2 layers of paper towels to absorb excess liquid. If you are using canned blueberries, drain well. Fresh or frozen blueberries can be dried on a cookie sheet in a 250 degree F oven for about 1 1/2 hours. Wash by overflowing water in container. Put fruit in a large pan and barely cover with water. Stickers will cook and strain out. Boil fruit until soft, occasionally mashing down and cutting through the fruit to release the juice. Strain through a cloth in a colander. This juice may be canned in fruit jars and used for candies and jellies, or used immediately.Candy ProcedureUse two large pans because candy foams. In one pan, mix sugar and syrup and bring to a full rolling boil. Simultaneously, cook foaming juice, pectin and baking soda mixture in another pan until foaming dies down, stirring both mixtures. Pour pectin mixture slowly into sugar mix and boil together about 2 more minutes, stirring constantly. Remove from fire, stir a bit more to allow bubbles to escape and candy to clear. Pour into buttered 10 x 6-inch glass dish. Let stand at room temperature until set (several hours).Turn out on sugared wax paper. Cut into squares and coat with more granulated sugar. Allow to dry at room temperature before storing. Grease and flour two 9-inch round cake pans, tapping out any extra flour.Sift together flour, granulated sugar, brown sugar, cocoa and baking soda into a bowl and set aside.Pour the Dr. Pepper into a saucepan and add the chocolate chips. Heat on low, stirring often, until the chips are just melted. Remove from heat and set aside.Combine eggs, buttermilk, oil and vanilla extract in a mixer bowl and mix on medium speed until combined, about 2 minutes. Gently lift off the pans and let the cake layers cool completely.To make frosting, beat shortening and butter in a mixer bowl until soft and fluffy. Add the confectioners’ sugar and cocoa, and continue mixing until combined. Stir together the Dr. Pepper and vanilla extract and very slowly pour it into the frosting, beating with mixer on high speed to thin it a bit.
