How to make hungarian chicken paprikas and dumplings? Simple! Hungarian Chicken Paprikas and Dumplings (My Mom’s)Posted by jerseyjan at recipegoldmine.com May 31, 2001OK, here’s the Hungarian part of me.1 (3 pound) chicken, cut into pieces4 tablespoons butter1/2 cup chopped onion3 cloves garlic, choppedSalt2 heaping tablespoons sweet Hungarian paprika1 tomato, peeled and chopped1/2 to 1 cup chicken broth3 tablespoons flour1/4 cup heavy cream1/2 cup sour cream, room temperatureBrown the chicken and onions and garlic in the butter till brown, adding salt midway. Remove the chicken and add paprika and cook for 1 minute.Add the tomato and 1/2 cup chicken broth, lower heat and simmer 5 minutes.Return chicken to the pan and cook for 30-40 minutes.Remove the chicken and keep it warm. Sprinkle the flour over the drippings, stirring briskly to smooth and blend and simmer for 3 minutes.Gradually add enough chicken broth to make 1 cup of liquid, then stir in the heavy cream. When it is heated through, turn off the heat and add the sour cream to the sauce, blending quickly so that it doesn’t boil. Spoon over the chicken.Sometimes I omit the heavy cream and put in a pint of sour cream. Although my Mom did not do it, I occasionally add chopped green peppers and mushrooms to the cooking chicken. I sometimes would make it with boneless chicken breasts only, adjusting the cooking time accordingly. Sometimes I also remove the chicken skin and de-bone it. Not authentic Hungarian, I know. My Mom would kill me if she knew!!!Dumplings2 cups flour1 teaspoon salt1 large eggAbout 3/4 to 1 cup waterMix egg, salt and water. Add enough flour to make a soft dough. Heat a pot of water. Add salt. At the boil, make small teaspoonfuls of the dough and pull it off the plate into the water. When they come to the surface, cook 1-2 minutes and drain. Add to the paprikas sauce.In a pinch, you can just make wide noodles instead of the dumplings. Geez, with all my adjustments, it kinda loses its Hungarian-ness. The article “Viewing from Another’s Perspective Sets Humans Apart?” talks about other, it was created by Lance Winslow.Recently I discussed what sets humans apart from other animals and species. The basic question, which has been kicked around for centuries is what makes boy so unique? So, different than the other species we see? Many immediately take their religious doctrine and use it to answer the question; they say things like God made us in his image. The animals were put here for us to use, eat, fish and etc; they are indeed here to serve boy? After kicking around such notions which cannot be proved either way; a gentleman, David, came up with an interesting concept.Of course he too borrowed the concept from his redaings and learnings and made it part of his belief system. Here is how it goes; empathy is what sets us apart basically that is it. Here is Davids longer version:Empathy: If anything, the abiltiy to see from another’s perspective is what sets humans apart from the rest of the animals. It is the bsais of many of the qualities that we hold in highest regard: kindness, charity, mercy, welfare, forgiveness. Far from being irrational, empathy confers a distinct advantage in any social siutation. It provides a foundation for promises, contracts, and deals. To a large extent it is the glue that binds society.I completely had to reject this and although I was polite; obviously not wanting any coffee spilled on my face here is why and whree I differ and my basis for such. Although you might be able to give other examples such as a dog going over to a child who fell off his skateboard and licking his face or some such event you observed. I have a more compelling argument against Davids notion: Actually chimpanzees that have been taught sign language have empathy too and from the other humans perspective. In fact this has been well documented by a Washington State reesarch facility. A girl who was pregnant came to work everdyay with the Chimps. Then one day she was missing for about a week, she had miss carried and then her stomach was small again, the Chimp asked what happened in sign language and where is the baby? The girl told her back, “it died” the chimp started to cry and hug that lady and said it was “sooo sorry’ in sign language?So in fact empathy is not only a human trait, Daivd will need to try again. As matter of fact, I am still unconvinced for sure huamns are that special in anything really. And on further study of other known earth species, I cannot come up with one single difference that sets humans apart.
